Swiss cuisine is influenced by German, French and northern Italian cuisine. The differences by region are very large, but can be roughly classified on the basis of language regions.

In French-speaking Switzerland, saucissons, croute au fromage and raclette are very popular. Fish dishes featuring lake trout, perch and trout, around Lake Geneva and Neuchâtel and Lake Biel are also very popular. In central Switzerland, where by the way the (cheese) dishes known and loved throughout Switzerland such as fondue, rösti and Älplermagronen (Alpine pasta with macaroni, potato, cheese, cream and roasted onion) also originate, the Lucerne Chügelipastete (stuffed pie with roast balls and white sauce), Hafenchabis (lamb or pork dish with cabbage) and Stunggis (pork and vegetable dish) are especially popular. In Ticino, which borders Italy, Polenta mixed with cheese and rabbit meat and dishes with Marroni (edible chestnuts) are favorites.
